Pancake Pursuit

Pancake IngredientsToday’s DoAhead Dining tip is a continuation of our Quick Bread series.

 

Last week we talked about how sweet it is to freeze quick breads and have a handy AND tasty breakfast for kith and kin!

 

The pursuit of Pancakes is how we’ll tackle today’s version of a Quick Bread.

Favorite Pancakes

2 eggs

2 cups Buttermilk

4 Tbsp Canola Oil

2 cups Flour

2 Tbsp sugar

2 tsp Baking Powder

1 tsp Baking Soda

1 tsp Salt

 

Blend eggs, milk and oil. (We use a blender.) Add dry ingredients and mix.

 

Our DoAhead can take several forms.

 

Make extra pancakes, place wax paper between them and freeze.When our the kids were small we did this and then they would reheat them in the toaster.

Option two is to simply make extra batter and store in the fridge. It lasts up to three days. Just this morning my kiddos grabbed day old batter and cooked their own cakes!

One more tip.  This recipe calls for buttermilk. I’m not one for keeping buttermilk on hand. Here’s a great substitution my Mother taught me years ago. Take 1 1/2 tsp of lemon juice and add to a cup of milk. Let it sit for a few minutes.

Bam! You have buttermilk!

You can eek one more DoAhead out of this Quick Bread. Have the kiddos make the batter the night before (If the children are small a little supervision from Mom is needed.)
