DoAhead Mashed Potatoes

Easter is a wonderful time for family gatherings. And there is no better time for a DoAhead recipe than for a large get together. This potato recipe is a hand me down from one of my Mom’s dearest friends. It’s simple, delicious AND it goes great with turkey, ham or both!

Karen’s Potato Casserole Supreme

Ingredients:

8 large potatoes cooked and mashed

8 oz Cream Cheese

1 cup Sour Cream

Garlic Salt

Chives

Salt & Pepper

Butter

Combine and beat ingredients until fluffy. Flavor with minced chives, garlic salt, salt and pepper to taste. Place in 2 quart greased casserole dish. Dot with butter. Cover with foil and bake at 350 for 50 minutes. Remove foil and bake for an additional 10 minutes.

The potatoes in today’s featured photo were red skinned. We scrubbed but didn’t peel. If you don’t care for the peelings use white or yellow potatoes.

That’s it DoAheads! You can prepare these a day in advance or even a week ahead of time. They freeze beautifully. Simply thaw them fully and then bake per instructions!
