Depending upon what part of the country you’re from the apples are done or nearly done falling. For those of you that are still trying to find a purpose for straggling apples this recipe is a breeze to make and super tasty. If you fall into the category of folks like me that do not have an apple tree you can do like I do——pluck them from the grocery aisle!
Apple Muffins
Ingredients:
1 Egg Beaten with fork
1/2 cup Milk
1/4 cup Canola Oil
1 cup grated, raw Tart Apple (unpared)
1 1/2 cups Flour
1/2 cup Sugar
2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Cinnamon
Mix egg, milk, oil and apples. Blend dry ingredients. Stir egg mixture into the dry ingredients just until flour is moistened. Grease and flour muffin tin. Fill tins 2/3 full. Bake at 400 degrees for approximately 20 minutes.
That’s it DoAheads! These muffins freeze beautifully so they’re easy to make in advance. It doesn’t matter if you have company coming or a busy work week …you’ll be glad you have these grab-and-go muffins.
