Sorry for my absence last week (a family emergency pulled me away.) But all is well and I can’t think of a better way to celebrate than with food! The little number I want to share today is a perfect summer time desert that my grandmother used to make. It has just seven ingredients so it’s a snap to make. If you like cream cheese (Is there anyone who doesn’t?) this desert will be a home run!

Cheerio Cream Pie
Ingredients:
8 oz. pkg of cream cheese
Can of Bordens Eagle Brand Milk
1/3 cup Lemon Juice
1 tsp Vanilla
Grahm Cracker Crust (Grahm Cracker and Butter)
Can of Cherry Pie Filling
Beat the Cream Cheese until soft. Add the Bordens milk and then the lemon juice and vanilla. Prepare a grahm cracker crust in a 9″ cake pan (I use approximately three packages of crushed grahm crackers with one stick of melted butter.) Pour the cream cheese mixture over the crust. Set in the refrigerator and let chill for two hours. Spread the can of pie cherries over the top. Cut and serve!
I often double the recipe. It makes for a thick and luscious desert but be warned—— it will need to chill awhile in order for the thick layer of cream cheese to set. It makes a great DoAhead desert if you prepare it the day before. I let it set overnight and store the cherries in the fridge as well. The next day when I’m ready to serve I simply spread the chilled cherries on top!

Oh, my! I thought my family was the only one that grew up with Cherry ‘O Cream pie! It is my absolute favorite. And I am so glad to finally meet someone else who loves it as much as I do.
