Hmmm. Mmmm. I can almost smell the Turkey now! Are you doing all the cooking? Or perhaps your crew does it potluck style——–everybody brings something. Regardless of how you and yours fix the fixins’, today’s post will share a new recipe for a great side-dish in addition to quick links for numerous tips and recipes.
This recipe is a new addition to DoAhead Dining. It was one of my mother’s favorites. It’s light, so it’s perfect side-dish for a heavy holiday meal. But don’t be fooled, the tangy pineapple and sweet cream make it hard to resist!
Glorified Rice
Ingredients:
2 cups Rice
1 package Lemon Jell-O
1 cup Cream
1 can drained Pineapple
Cook and cool the rice. Dissolve one package of lemon Jell-O in slightly less water than what the packages directions indicate. Let the mixture set until it reaches a syrupy consistency. Add one cup of cream to the Jell-O mixtures and whip until it becomes “fluffy”.
Stir pineapple into the rice and then fold in the above mixture. Refrigerated until fully chilled.
*A great DoAhead is to cook the rice in advance. Simply refrigerate once cooked. This salad takes mere minutes to prep if the rice is cooked ahead of time.
