Last week, I shared a recipe for chocolate cake in DoAhead Dining that has been known to cause the shedding of blood in our home. (I may have neglected to mention that in the post.) Today’s recipe is our go-to frosting for the cake. It set’s beautifully. It’s shiny and it’s uber chocolately, so it doesn’t just look good——–it tastes good!
Without further adieu’…
Rich Chocolate Frosting
Ingredients:
1 cup Mini-marshmallows
3/4 cup Butter
1/4 cup Water
6 Tbsp Cocoa
2 Cups Powdered Sugar
Put butter, water and mini-marshmallows in a microwavable bowl. Heat for approximately one minute or until marshmallows melt and start to “rise”. Blend with hand mixer. Add cocoa and mix. Add powdered sugar and mix. If at first the frosting seems reluctant to mix don’t worry. As heat works through the powdered sugar the shiny, firm consistency will occur. However, if you get into trouble add a trace amount of water.
That’s it! Next Monday, contributor Jodie Barrett will share fun ideas for the perfect Valentines table setting!
