I was totally surprised to find that this gem of a recipe hadn’t made it on the website yet! Carrot Casserole was “invented” by Doc’s Mom. It’s incredibly simple…and healthy!

We love it as a topping for baked potatoes but that wouldn’t be necessary.

I’ll quit chatting so you can whip this bad boy up and have it ready for supper when you walk in the door!

Instructions
  1. Brown ground beef. Add chopped onions when cooking. Sprinkle with Garlic Salt and Pepper.
  2. Prepare carrots by peeling initial layer of "skin" until carrots are clean. Continue to use a peeler to "shave" thin layers of carrot. Add to the ground beef mixture and stir thoroughly.
  3. Place all ingredients in a lightly greased casserole dish. Bake for 35 minutes at 350 degrees (or until carrots are tender).
Recipe Notes

This dish freezes beautifully. Simply thaw and bake according to instructions. Another great DoAhead is to prep the night before and then place in a timed oven or in a crock-pot. (If using a crock-pot cook on low for 4 hours.)
