Another January recipe for light eating…homemade broth!

The plus? It’s also the bomb for when (hopefully “if”) you or your loved ones make a date with a virus during the cold and flu season. 

This chicken stock recipe is from my sister-in-law.

Instructions
  1. Cover chicken in 4 quarts of water and cook for one hour. Cool until fat forms on the surface. Skim and remove.
  2. Add all ingredients except parsley and cook for another 6 to 8 hours. Approximately, 10 minutes prior to removing from heat add parsley.
  3. Cool again. Once more skim congealed fat from the top.
Recipe Notes

Broth of any kind is a great DoAhead. It's easy to freeze and than ready to use when you want to add noodles and/or meat. Fun fact: the vinegar is what helps extract additional calcium from the bones of the chicken!
