Today’s gem of a recipe uses grated Zucchini to add moisture to a simple, frosting-less cake.

Ingredients

Instructions
  1. Cream butter, oil and sugar. Beat in eggs.
  2. Add lemon juice, milk, cocoa, flour, baking powder, soda and salt.
  3. Stir in zucchini and 1/2 bag of chocolate chips.
  4. Pour into a greased 9 X 13 pan and sprinkle with remaining chocolate chips. Bake at 325 for 45 minutes.
Recipe Notes

There are two DoAheads for this recipe. The first involves prepping and than freezing your zucchini. Prep enough zucchini to make two cakes. Set aside half and freeze it so that you can enjoy zucchini cake when the snow is flying!

Of course, you can also freeze a fully made cake just remember--- when thawing pastry, cake or breaded items you should remove them from the baggie and set them on a cooling rack.  Then cover with a tea towel.  If you thaw in an enclosed bag the resulting condensation may result in mushy food!
