Thanksgiving is one leaf drop away! Many of us are thinking about the meal whether it be consuming, cooking, or both!
Today I’m sharing a recipe today for garlic mashed potatoes made from cauliflower. You seriously can not taste the cauliflower. But if the thought of no spuds is hard on the crew try using both. You’ll give your
standard mashed potatoes a nutritional boost by incorporating cauliflower.
Either way, I promise you’ll like these!

- 2 Heads Cauliflower
- 1-2 tsp Garlic Salt Minced.
- 2-4 Cups Water May use milk or non-dairy milk.
- Boil the cauliflower until tender. Drain water. Let cool for a few mintues.
- Place cauliflower in blender. Add liquid of choice until the mixture is the consistency you like. Add garlic salt. May add less or more to taste.
A quick "cheat" is to purchase pre-chopped cauliflower. This makes preparation even easier! Add a dollop of butter or plant-based butter (we like Earth's Balance) and Bam! Nutritious...delicious...mashed "potatoes"!
