Parmesan Chicken

Today’s post is another “big-batch” recipe. This coating for chicken freezes well and can be stored for up to three months.

Our family is transitioning into having more cooks around the house (high school and college-age kiddos make marvelous chefs)! I keep a surplus of this coating on hand. They love it and it’s easy for them to prep an evening meal.

It is also a great recipe for large groups. When we’re feeding just our family we keep the entire chicken breast intact. But when cooking for a crowd it works best to cut the chicken in strips. The strips will:

  • Cook more quickly.
  • Are easier to serve.
  • Allow guests can take as much or as little as they like.

As with the potato recipe published earlier this week these are awesome for large gatherings like a graduation, a rehearsal dinner or a family reunion.

Instructions
  1. Dip chicken in melted butter, then in coating mixture. (Be sure to coat both sides of the chicken.) Place on a tin-foil-lined cookie sheet. Drizzle remaining butter over chicken. Bake at 375 degrees for 25 minutes or till tender. (I usually cook the chicken for 12 or so minutes, turn it over, and then cook for another 12 minutes.)
  2. As mentioned in the narrative, it works well to cut the breasts in half if you are making a large quantity.
Recipe Notes

I recently made this for a large gathering of "prom kids". I had leftover coating.  No doubt it depends upon how heavily the chicken is covered. I was glad to freeze it and have it on hand for another occasion!
