Parmesan Chicken
Oregano & garlic give this Parmesan coating an Italian twist! The quantities in this recipe will leave plenty for freezing or plenty for serving a large crowd!

  1. Dip chicken in melted butter, then in coating mixture. (Be sure to coat both sides of the chicken.) Place on a tin-foil-lined cookie sheet. Drizzle remaining butter over chicken. Bake at 375 degrees for 25 minutes or till tender. (I usually cook the chicken for 12 or so minutes, turn it over, and then cook for another 12 minutes.)
  2. As mentioned in the narrative, it works well to cut the breasts in half if you are making a large quantity.

I recently made this for a large gathering of “prom kids”. I had leftover coating. ┬áNo doubt it depends upon how heavily the chicken is covered. I was glad to freeze it and have it on hand for another occasion!
