Today’s DoAhead Dining features another simple but tasty broth recipe (shout out again to my sister-in-law!)

Broth is so versatile. It’s awesome to have on hand for when you need something super light (but warm) to accompany a salad or sammie. It’s also  great for quick starts to a heartier meal.  Keep the meat, add it and a few veggies or noodles and Wahlah! You have a stand alone meal!

Ingredients

Instructions
  1. Cover ribs in 4 quarts of water. Add vinegar. Cook on low temp for one hour. Cool until fat forms on the surface. Skim and remove.
  2. Add all ingredients except for parsley and cook for another 6-7 hours. Approximately 10 minutes prior to removing from heat add parsley.
  3. Cool again. Once more skim congealed fat from the top.
Recipe Notes

This recipe is cooked much like Chicken Stock. As is true of that recipe, the vinegar helps extract calcium from the bones!  DoAhead by removing and than freezing the meat and any portion of the broth you don't want to use immediately.
