Confession. I had to search the website because I was in disbelief that I hadn’t already posted this amazing take on well-seasoned fresh veggies!

One of the niftiest aspects of this recipe is that the marinade is equally good if the veggies or raw or lightly cooked. Bottom line. If your day was one of those that was full of more behinds than DoAheads skip heating them. Simply marinade, let set and serve!

Instructions
  1. Prep Marinade by mixing all ingredients in a bowl. Pour over vegetables and stir to coat. Veggies may chill for 2 hours in marinade prior to serving.
  2. If you prefer lightly cooked veggies prep as above but saute' in a large skillet OR wrap in foil and place on grill. Heat should be medium. Grill 15 to 20 minutes. "Flip" foil pouch every five minutes to ensure the vegetables don't brown too much on one side.
Recipe Notes

This best DoAhead for this recipe is to prepare the marinade in advance and store it in the fridge.  If you have time get your veggies ready as well. Clean, prep and then store the veggies in a Ziploc baggie the day before. You'll be ready to serve them in a snap when supper time closes in the next day!
