Marinated Vegetable Salad

Veggies 1I almost didn’t post this recipe because I shared a similar one earlier this summer.

HOWEVER, I promised that this months recipes would help make the most of the produce that bubbles from our gardens and/or groceries stores this time of year. The Marinated Vegetables recipe posted in June serves well cool or cooked. This recipe is meant to be chilled only and mercy me it is a GREAT way to serve up garden veggies!

My mother often prepared it for family gatherings. I smile as I imagine my not quite four-foot frame peering over the counter as she dished it in one of her favorite bowls. Perhaps it will become a family favorite for you too!

Ingredients

Instructions
  1. Cooked sliced carrots for five minutes (or until they begin to tender). Drain and cool. Break cauliflower into bite-size pieces and cook for three minutes. Drain and cool.
  2. Mix remaining ingredients together and pour over cooled carrots and cauliflower. Cover bowl and let marinate in refrigerator for twelve hours or overnight prior to serving.
Recipe Notes

It's helpful to have a few recipes that are SUPPOSED to sit overnight. Obviously, this bad boy could be made early in the day and served later that evening but it's a handy dish to make a day ahead of time. One less dish to prepare the next day!
