Let’s be honest. There are a few recipes on DoAhead Dining that I have to fudge the DoAhead out of it. It’s just that some recipes are too dang good not to share. Today’s recipe is a true DoAhead. You can make this the night before, pop it in the oven when you grab your morning coffee and serve up a healthy breakfast before the kids go to school. Thank you to sweet Aunt Cathy for sharing her grandmother’s recipe!
DoAhead Egg Bake
Ingredients:
2 small cans of Green Chilies
1 small can of diced Jalapenos
1 pound of Monterrey Jack Cheese
1/2 pound of Cheddar Cheese
10 Eggs
1/2 cup Flour
2 1/2 cups Milk
1 1/2 tsp Salt
Pepper to taste
Place chilies, jalapenos and cheese in the bottom of a greased casserole dish. Mix and pour over remaining ingredients. Bake at 350 for approximately an hour (or until an inserted knife comes out clean). May prepare ahead of time the night before.
If your tribe is not into spicy foods you can easily eliminate or cut down on the spicy ingredients. If you hadn’t guessed, the quantity of cheese and eggs in this bad boy lends itself to a large dish so if you have leftovers take note——they will reheat beautifully the next morning (pop them in the oven on a low temp for 20 minutes).
