Beef Tips

Cold weather ignites two things in our home…the corn burner and comfort food. Nothing brings my tribe comfort more than mashed “tators” and gravy, so when my sis’ said she stumbled upon an awesome crock-pot recipe for beef tips I knew I’d have to give it go. I gave it go and within minutes it was GONE! The family loved it! Check out the recipe below and than read on for the winner of last weeks book give-away!

Beef Tips & Gravy

Ingredients:

1 and 1/2 pounds sirloin cut into strips (We cubed ours.)

1/2 cup chopped Onion

1 ten ounce can Cream of Mushroom Soup

1 Tablespoon Worcestershire Sauce

1/4 cup Water

1/4 cup Sour Cream

Salt and Pepper to taste

Lightly spray oil in your crock-pot. In a separate bowl mix mushroom soup, Worcestershire, water and onion. Brown beef tips in frying pan and then add to liquid and stir. Pour mixture into crock-pot and cook on high for one hour.

Turn to low for an additional 4 to 6 hours. (The four hour minimum will ensure they are well cooked. Our scheduled accommodated the longer cooking time…the meat was unbelievably tender!)

Fifteen minutes prior to serving add sour cream and stir. We served ours over DoAhead Mashed Potatoes but it would be just delicious over rice or noodles. This recipe has been slightly modified for sake of speed and ease. Hearty thanks to the “Seasoned Cook” from Food.com for the original.

That’s it…a DoAhead meal that will help minimize perspiration on those crazy Fall nights when the soccer field is calling or the leaves in the yard are crying “Rake me please!”
